Last weekend seemed to be incredibly busy. It was filled with laundry, doing sports (easy calculation: more sports = more food), bringing Cookie to the vet over a very bad eye infection, then struggle forever to keep her calm to get the ointment in her eye three times a day, visit my mum and the building site (yes, we became home owners) and more laundry. So now I feel like I need another weekend to recover from the weekend. But who doesn’t feel like that on Mondays?

Somewhen during this weekend, I was also active in the kitchen and tried How Sweet It Is’ brown sugar roasted chicken. She has the most amazing recipes on her blog and you cannot imagine how good this was! It was the first chicken that I cooked in one piece (yes, it was weird stuffing garlic cloves up its a**), it was quick and easy to do and it turned out to be one of the best chickens ever! I adapted the recipe only a little by crushing a garlic clove already in the butter mix and stuffing it with garlic cloves and a teaspoon of the butter/sugar mix. I left away the beer but will definitely try that version too. The slightly sweet taste with a deliciously tender meat and a perfect crust were so good that we ate the whole chicken at once. And I think I have to do another one next weekend. All my guests will have to eat this chicken from now on. I appointed it to be my favourite autumn dish.

And while the chicken was roasting, I was mixing together a poppy seed cake that I haven’t had since a long time. Recipe will follow soon.
