Also if everything in front of our window is more white than green, it feels like spring is around the corner. It’s that time of the year where I feel that I need to include more fruit and veggies into my diet than cheese and roasts. Since one week, I am trying to add fruit or greens to any meal I am creating and some things really turn out yummy. I also created a ‘Healthy Food’ board on Pinterest that hopefully gives me some inspiration. If you have recipes of tasty healthy dishes to share, send them over!

What you need (per Person):

4 slices of ciabatta or olive bread
1 tablespoon of ricotta per slice
1 apple
sea salt & pepper
truffled balsamico glaze

Grill or toast the bread slices until slightly browned. Distribute the ricotta evenly on top of the bread slices. Cut the apple into thin slices and put them on top of the bread with ricotta. Sprinkle with sea salt and pepper and drizzle a bit of truffled balsamico glaze on top.
