These are the most easy biscuits I’ve ever done. Good thing is that they contain no flour. Bad thing is that they contain a ton of chocolate. Or is that good anyway?
Here we go.
No Flour Chocolate Balls
200gr dark chocolate powder (we prefer it sugar-free and used the brand Cailler)
300gr ground almonds
2-3 tbsp corn starch
Mix eggs, sugar and chocolate powder until creamy. This is hard if you have to do it by hand. For me the kitchen aid did the work and it anyway took some time. Try to be patient. Mix in the other ingredients and put the dough in the cold for some hours until it has hardened a bit.
Form balls and set them on a tray lined with baking paper. Let them dry over night.
Place the tray in the middle of the pre-heated oven (250 degrees celsius) and bake them the next day. The balls should have only slight cracks and still be nice and juicy inside.
